BLANC DE BLANC NV WITH:
Roasted Cauliflower and Cashew Curried Bisque with Tahini Cream
This is a sparkling that should be enjoyed every day! When paired with the soup it brings out the delicate curry flavours while leaving flavours of lemon curd and fresh pastry on your palette. The acidity is bright and the cashew cream creates a richness in the wine.
RESERVE VIOGNIER 2021 WITH:
Roasted Pumpkin Pizza with Pumpkin and Ricotta Cream, Caramelized Onions, Brie and Orange Oil
This pizza recipe was made just for the Viognier!  The orange oil brings out lots of orange peel and tangerine flavours in the wine. The brie and pumpkin marry well with the weight of the wine leaving lots of warm spice and vanilla on the finish.
CABERNET MERLOT 2021 WITH:
Mushroom Panzanella Salad with Beef Tips, Truffle Dressing and Whipped Goat Cheese
The mushroom and beef panzanella salad softens the tannins in the wine while bringing out lots of dark chocolate and soft smoky flavours. The goat cheese softens the acidity while complimenting the oak.  Flavours of raspberry, cherry and baking spice mingle into an elegant, yet jammy finish. This wine is a perfect fall sipper!
RESERVE MALBEC 2020 WITH:
Lamb Riblets and Wild Rice Salad with Dried Blueberries
The wine shows lots of wild blueberry, violets, cocoa and spice when enjoyed with lamb riblets. The wild rice salad is a perfect side to any meal and is delicious paired with the wine on its own.
This Malbec will pair with any grilled or smoked dishes and loves a touch of heat!

Tasting Notes

The nose is fresh with aromas of green apple, lemon, lime zest and mineral with notes of cream and fresh dough. The mousse is fine with a creamy mouthful, refreshing acidity and flavours of green apple, confit lemon, blanched almonds and wet stone. The finish is structured and refreshing with lingering minerality. Certainly perfect to drink now but will further develop complexities through short to medium term aging.

Tasting Notes

Light straw in the glass with intense aromas of orange blossom, white peach, apricot, candied ginger, and tropical green tea. On the palate, it is rich and luscious with supporting acidity and flavours of spice-poached apricot, bitter orange marmalade, tangerine zest, salted butter and soft vanilla. The finish is long with lingering flavours of vanilla bean and orange peel.

Enjoy with soft cheeses with orange compotes, halibut with a creamy saffron sauce or cumin-scented grilled shrimp.

Dark purple in the glass with an intense nose of dried blueberry, black cherry, vanilla, charred oak and milk chocolate. On the palate it is rich, ripe and full-bodied with smooth, young tannins and flavours of black cherries, plum compote, dark chocolate and a touch of smoky oak. The finish is long with drying tannins and lingering acidity.
Enjoy with spice-rubbed rib eye or lamb chops. Drinking well on release but show further complexities with a few years in the cellar.

On the palate it is rich, ripe and full-bodied with flavours of dried blueberry, fresh pomegranate, kalamata olive, charcoal, leather, and a touch of smoky oak. The finish is long with dusty tannins and lingering acidity.

Enjoy with a spice-rubbed rib eye or lamb rack, wild rice and dried blueberry salad with balsamic dressing, and olive tapenade.  Drinking well on release but show further complexities with a few years in the cellar.
