TASTING NOTES

A brilliant medium lemon hue with a very fine and steady bead. The nose is youthful and fresh with notes of wet stone, green apple, fresh butter, bread dough and warm toast. On the palate, the mousse is remarkably rich, fine and mouth-filling. The acid is vibrant and bright throughout and the finish long with stone, cream and toast notes dominating. An excellent and complex wine ideal for drinking now well chilled (6°C). Classic matches include poached Turbot with cream and button mushrooms, Dover sole à la meunière, smoked salmon, fresh oysters in the half shell, caviar with buckwheat blinis and crème fraiche and double and triple cream bloomy rind cheeses.

This wine will cellar well for a further 3-5 years, if you prefer a more mature style of sparkling wine.

TASTING NOTES

Traditional method sparkling made from a blend of Chardonnay and  Pinot Noir.
The nose hints at ripe red berry, mineral, light spice and subtle anise. The mousse is creamy and fine, but the wine is dry and quite bracing with a long, fine finish of fruit skin, ripe stone fruit and light toast. Sparkling wines such as this, with their hint of sugar, bright acidity and carbon dioxide have all the necessary tools to age well for years. Although delicious and perfectly appropriate to drink this wine immediately, this wine will change and mellow through 2021.

Suitable as the perfect aperitif to serve friends and family on arrival at between 5 and 8°C. This wine will pair nicely with shellfish or poached fish in pink sauces, smoked salmon or tuna tartare, charcuterie plates or antipasti. Although not sweet enough to pair with dessert, try with high fat creamy fresh and bloomy rind cheeses such as Upper Canada ricotta drizzled with honey and topped with toasted, candied nuts. Will marry nicely with fresh strawberries in season drizzled with a little aged balsamic or topped with cracked pepper.

Traditional method sparkling wine with aromas of lemon, apple and toasted brioche. GOLD Texsom 2019 International Wine Awards

The nose is complex with aromas of lemon, apple and toasted brioche. The mousse is fine with notes of toast, lemon and light minerality, complemented by refreshing acidity. Certainly perfect to drink now but will further develop complexities through short to medium term aging.

This wine will pair nicely with fresh shucked oysters, white fleshed fish or lobster. Also a perfect pairing with bloomy-rind, double or triple cream cheeses. Or serve on its own as the perfect aperitif.

WINEMAKING NOTES

A blend of Pinot Noir and Chardonnay from the 2013 vintage. Both varieties are primarily sourced from our estate vineyards in the Creek Shores sub-appellation, with some fruit coming from some of our favourite growers in both Creek Shores and Niagara-on-the-Lake. After harvest both varieties went into the press with the free run juice being kept separate from the press wine. Each went through primary fermentation and were then blended and bottled for secondary fermentation. The wine was aged on lees for a minimum of 48 months during which the bubbles became smaller and more compact. A slight autolytic, or toast and bread character also developed during this time. After disgorging, winemaker Jean-Pierre Colas felt the wine was in perfect balance so decided to not add any sugar to the dosage resulting in a classically dry sparkling wine in the zero dosage style. This wine was not exposed to oak and did not undergo malolactic fermentation.
