TRY PINOT GRIS 2021

Celery Root and Roasted Pear Soup with Pumpernickel Croutons

The celery root soup is a wonderful compliment to this fresh and zippy wine! The refreshing acidity cuts through the creaminess of the delicate soup. The roasted pears pull out the white pear flavours in the wine. The fennel and cardamom spices compliment the light spice in the Pinot Gris, while leaving lots of lingering flavours on your palette.
This soup is also delicious served chilled on a warmer spring day! Great for a picnic after a muddy hike.

TRY PINOT NOIR 2021 WITH:

Beet “Tartare” with Cured Egg Yolk, Creamy Beet Puree and Toasted Baguette

Pinot Noir pairs brilliantly paired with beets! The beet tartar complements the sweet baking spice and vibrant, juicy red fruit in the wine. The walnuts soften any tannins, while the black olives complement the earthiness in the Pinot Noir. This recipe is perfect for an appetizer to start the evening or even great as a salad topper!

TRY THE SANDSTONE GAMAY 2021 WITH

Braised Short Ribs with White Cheddar and Grainy Mustard Mashed Potatoes
This decadent dish is a fantastic pairing with the Sandstone Gamay! The mustard and cheesy mashed potatoes complement the acidity in the wine. The rich sauce and braised beef compliment the Gamay’s elegant flavour, leaving a burst of juicy raspberry and black pepper.  Powerful, yet smooth.

TRY THE PINOT NOIR 2021 OR THE SANDSTONE GAMAY WITH

Cremini and Portobello Mushroom Buttermilk Soup

The cremini and portobello soup is another classic pairing for Pinot Noir. Mushrooms complement the fruit while enhancing the Burgundian style of the wine. You can also add some bacon for some added flavour.
This soup will also pair deliciously with the Sandstone Gamay.

Tasting Notes

Our 2021 Pinot Gris is fresh and fruity with aromas of honeydew melon, green pear and light spice with a touch of stony minerality. On the palate it is lively with refreshing, firm acidity and flavours of lime zest, fresh lemon, white pear, fresh green herbs and wet stone, with a long refreshing finish.

Enjoy over the next 3 years with raw shellfish, deep-fried calamari, simple chicken dishes or pork schnitzel.

Tasting Notes

Classically pale ruby in the glass. Intensely aromatic with notes of cherry pit and porcini mushroom with a touch of forest floor. On the palate it is dry, medium-bodied with soft tannins and refreshing acidity with flavours of cherry, cranberry, liquorice, vanilla and baking spice. The finish is long and complex with a savory and drying note.

Compelling on its own will also complement simple roast chicken with mushrooms, grilled salmon or duck breast. Drinking well on release but will develop further complexities with short to medium-term aging.

Tasting Notes

Bright ruby in the glass with aromas of black cherry, plum compote and charred oak. Medium-bodied with fine tannins and flavours of black cherry, raspberry and pomegranate with notes of sweet spice, black pepper and a gamey, earthy finish.

Decant and serve in large Burgundy-style glasses, slightly cool (18-20oC).  Excellent served alongside classic Bistro fare, grilled or roasted poultry and red meats, game, lightly smoked meats and semi-firm cheeses. Unlike many wines made from Gamay, this powerfully structured version will reward cellaring for up to 10 years with a cornucopia of new aromas and mellowed textures.
